Le Batistou has teamed up with Les Salaisons Bernard to offer you rosettes, dry sausages, “brides” and curved sausages made in the heart of a small Auvergne village. A range of artisanal dry sausages, certified by the Protected Geographical Indication (PGI) Auvergne. It is also certified bythe “Ma Région, sesterroirs” label, an initiative of the Auvergne Rhône Alpes region, which guarantees its regional origin. Les Salaisons Bernard are attached to a tradition of buying animals. They work in a short circuit with a slaughterhouse in Yssingeaux(43), where the pigs come from local farms. Each week, the carcasses of the fresh pigs are received, boned and prepared by our butchers before being processed into dry sausages and other specialities. The products are then stuffed into natural pork casings, and placed in traditional wooden drying sheds that encourage the development of a natural grey-green bloom.
